This Mexican Tortilla Soup recipe has always been one of our family’s favourite easy meal recipes because it’s packed with flavour and healthy ingredients, and it’s a snap to make! I love making this Mexican Tortilla Soup in the slow cooker OR on the stovetop, depending on how my week is going and how much time I have to make dinner!
We have a few food allergies in our family and this soup makes dinnertime easy since everyone can customize their own bowl with their favourite toppings! We love adding a dollop of sour cream (or coconut yogurt for our dairy-free family members), some cheese or vegan cheese, fresh avocados, tomatoes and even jalapeños!
Mexican Tortilla Soup Ingredients
Because this Sopa Azteca Receta (I love the way it sounds in Spanish, don’t you?) is a mainly vegetable-based Mexican soup, and there are just a few primary ingredients needed to make it. The toppings are all optional, so you can even make this a gluten-free and dairy-free soup if you want to. You’ll need:
- Chicken stock
- diced tomatoes
- canned corn
- canned black beans
- tomato paste
- onions
- bell peppers
- jalapeños
- shredded chicken
- lime
- taco seasoning
Topping Suggestions:
- shredded cheese
- tortilla chips or strips of fresh tortilla (learn how to make homemade tortilla strips here)
- sour cream or plain Greek yogurt (or your favourite dairy-free yogurt)
- avocado chunks
- fresh diced tomatoes
- fresh chopped cilantro
- anything else you’d like!

Mexican Tortilla Soup (Sopa Azteca Receta)

For the soup:
- 1 tablespoon olive oil
- 1 white onion diced
- 1/2 red onion diced
- 1 green bell pepper diced
- 2 tablespoons picked jalapenos diced (or whole, if desired)
- 2 tablespoons lime juice
- 2 teaspoons taco seasoning
- 4 cups chicken stock (or vegetable stock, to make it vegan)
- 2 400 gram cans diced tomatoes (canned)
- 1 small can corn (drained)
- 2 cans black beans (drained and rinsed)
- 2 tablespoons tomato paste
- 1 cup shredded cooked chicken breast (optional)
- salt and pepper to taste
Optional Toppings:
- shredded cheese
- tortilla chips or strips of fresh tortilla
- sour cream or plain Greek yogurt
- avocado chunks
- fresh diced tomatoes
- fresh chopped cilantro
Recipe: Instructions
Stovetop Instructions:
- Heat a large pot over medium-high heat and add the olive oil, onions, bell pepper, jalapeños, lime juice, and taco seasoning. Saute until the onions soften.
- Reduce the heat to medium and add the chicken or vegetable stock, diced tomatoes, corn, black beans, tomato paste and shredded chicken.
- Stir everything together well and let simmer on medium low for about 40-45 minutes, stirring every now and then.
- Serve with whatever toppings you wish!
Slow Cooker Instructions:
- Add the onions, bell pepper, jalapeños, lime juice, stock, taco seasoning, diced tomatoes, corn, black beans, tomato paste, and shredded chicken (optional) to your slow cooker.
- Cook on high for 2-3 hours or on low for 4-6 hours.
- Serve in bowls with whatever toppings you wish!

how many beans, because cans can hold different amounts of beans
It’s two 15 ounces (or 400gr) cans.
This soup was easy to throw together and was delicious. Not sure what a small can of corn is, (ie oz.) but I thought there was too much corn but for some it might be great.. I also added a dash of cumin. I doubled the recipe for a crowd and found I needed more broth. I don’t think you can screw up this recipe, no matter how you tweek it.

The slow cooker instructions are confusing, the video and instructions have all ingredients in the crockpot, no browning.. Under the Notes, slow cooker it says to follow Step 1 and then add all the ingredients to the slow cooker, giving the impression that are sautéed. Can you clarify please..
To make this soup in the Slow cooker all you have to do is dump all ingredients in your your crockpot and cook on high for 2-3 hours or on low for 4-6 hours. Hope this helps ☺️
