One of my favourite ways to get more veggies in my diet is to up my salad game – I mean, we all know salads are a great way to get more fresh veggies, but if I’m honest salads can sure get boring after awhile which is why coming up with new salad ideas is always at the top of my to-do list. This Low Carb Italian Chopped Salad is one of my favourite salads lately and I know you’re going to love it too! How to make an Italian salad
Making an Italian-style salad is so easy! Start with a bed of greens, a savoury Italian salad dressing (like my Classic Creamy Italian Salad Dressing) and include all of your favourite mediterranean ingredients:- artichokes
- Parmesan cheese
- Roasted peppers
- olives
- pepperoni
- fresh mozzarella
- prosciutto
- tomatoes

Low Carb Italian Chopped Salad
This Low Carb Italian Chopped Salad is a delicious and easy-to make light meal or side dish that's packed with savoury Italian flavours and lots of veggies!
Recipe: Ingredients
- 4 cups arugula
- 4 cups fresh spinach
- 2 cups halved cherry tomatoes
- 1/4 cup Classic Creamy Italian Dressing (recipe linked below) OR your favourite Italian-style salad dressing
- 1/2 cup mixed pitted olives
- 1/3 cup canned artichoke hearts chopped
- 1/4 cup roasted red peppers sliced
- 6 slices prosciutto chopped
- 8 slices pepperoni or dried chorizo sausage, chopped
- 1/2 cup fresh mozzarella balls or sliced fresh mozzarella
- 1/4 cup shaved parmesan cheese
- 1 tablespoon basil leaves chopped
- balsamic vinegar for drizzling
Recipe: Instructions
- Add the spinach and arugula to a large platter or salad bowl.
- Add the cherry tomatoes on top and drizzle the Classic Creamy Italian Salad Dressing (click HERE for the recipe) over everything. Toss well.
- Add the olives, artichoke hearts, roasted peppers, prosciutto, pepperoni, mozzarella, parmesan, and basil leaves on the top of the salad (toss gently if necessary).
- Drizzle a tablespoon or two of balsamic vinegar over the top and serve.
