French Onion Soup is one of my favourite soups ever – it’s just SO delicious and flavourful and then there’s all that delicious bread and melted cheese on top. I mean, who could resist?? I’ve made real, traditional French Onion Soup several times at home with amazing results using this recipe for Anthony Bourdain’s Les Halles French Onion Soup. It’s seriously to die for, but it’s terribly time consuming – not something I can wrap my head around in the stage of life I’m currently in.

I will make the time to try Anthony Bourdain’s recipe again soon, but until then I’ll be making this Crock Pot French Onion Soup with White Beans instead. It’s an absolutely delicious version of French Onion Soup because you can actually caramelize the onions in your slow cooker (what?? I know!). And the addition of white beans and oregano adds a very subtle Italian twist – it’s kind of a mash-up between Italian White Bean Soup and French Onion Soup and the results are simply heavenly.

And instead of broiling the soup with croutons and cheese on top before serving, I make a simple batch of homemade croutons (you can even use store-bought if you’d like!) and serve the soup with a few croutons on top and, of course, some shredded Parmesan cheese. Crock Pot White Bean French Onion Soup
Recipe: Ingredients
- 3 large onions diced
- 1/2 teaspoon sea salt
- 1/4 cup melted butter or other vegan butter substitute
- 500 ml white beans, rinsed and drained (about two 14oz cans)
- 1 teaspoon dried oregano
- 1/2 teaspoon freshly cracked black pepper
- 2 teaspoons fresh thyme leaves
- 6 cups vegetable stock
- homemade or storebought croutons (for garnish)
- shredded parmesan cheese (for garnish)
Recipe: Instructions
- Add the diced onions, salt, and melted butter to your Crock Pot on high.
- Stir to combine and let the onions caramelize for 3 to 5 hours in the Crock Pot.
- Add the beans, oregano, pepper, thyme, and vegetable stock and continue to cook for another 3 hours on high.
- Garnish with your favourite homemade or store-bought croutons and some grated Parmesan cheese!

I made this and loved it. I caramelized the onions in skillet then put in crockpot added extra can of beans and used beef broth. Made slice of Dave’s whole grain toast . I will cook again..

Just a FYI….. I am an older person and so naturally my eye sight isn’t what it used to be…and although I wear glasses I cannot see whatever is written or surrounded in yellow. I know if you never been here done that you would not realize. Just thought I would pass this along!! I am definitely going to make the soup though! Thanks!

I am so excited! I am trying your recipe as I type but I didn’t have enough onion (only 1) but I happened to have two large fennel bulbs (had to use dried seasoning unfortunately). Thank you so much for the post. Hopefully my improvisation works well with it!

I just made this and love it! I used dried herbs since I didn’t have fresh and it turned out great! I’d probably add another can of beans or less liquid next time since the onions sweat a lot and add lots of moisture. I also added a bay leaf because, why not!? I can’t wait to make this again-great recipe! I love the simple ingreafients!

Yes! Absolutely! I make this recipe vegan all the time by using olive oil or coconut oil 🙂 Enjoy!

If saving time is important to you, then maybe this is your recipe. However, I’d rather put in the time and make a true classic French onion soup. I also thought the onions and the texture of the beans fought with each other. Will not be making this recipe again.
I’m sorry you didn’t enjoy this recipe. Classic French onion soup is certainly different than this recipe, which is based on a traditional French white bean soup.

Can you provide cook times to do a stovetop version?
I’ve made this recipe on the stovetop a few times. I caramelize the onions for about 20 minutes over medium heat and then simmer the soup for about another half hour or so.
Loved this recipe- thanks so much for sharing! I used Asiago cheese in addition to the parm. and toasted “roasted garlic french bread” to break up into pieces for the topping. I also served it with roasted broccoli on the side with the bread and it was a great flavor addition. I will definitely be making this soup again, thank you!!

Great question! I just always use basic yellow onions unless otherwise indicated in the recipe. I find the yellow onions caramelize beautifully and have a nice mild flavour that my family enjoys 🙂
Can you use dried beans for this recipe?
Also, do you have instructions for making it in an Instant Pot?

You can definitely use dried beans as long as you cook them first and then follow the recipe as directed. I don’t actually have an Instant Pot (yet!)…they’re sold out all over Europe and I need to get my hands on one! When I do, I’ll update the recipe for you with IP instructions 🙂
I’m making this right now! So tasty! (I did a can of beef broth and a 32 oz container of veggie stock.)
I was wondering if you could tell me your reasoning behind the lengthy cook time after the beans, broth, seasoning, etc are added? 3 hours seems like a lot, but I don’t cook with my crockpot very often.

Yes, absolutely! Just caramelize the onions over low heat and cook as normal. 🙂
We thought this was just okay. We enjoyed eating it with some seasoned croutons and Parmesan cheese but I don’t think I’ll make again.

You caramelise the onions on high for anywhere between 3 to 5 hours. I have not tried caramelising them on low, so I couldn’t tell you what the time for that would be. Hope this helps! Let is know how it turned out!

Just made this in my InstantPot. Caramelizas the onions on high for an hour. Added the rest of the ingredients and cooked on high for 29 minutes. It came out so delicious! The whole family loved it

Very good soup. I did it on the stove top with beef broth and added Worcestershire sauce. It tasted exactly like French Onion soup! A real fast, flavorful soup!
Does this soup freeze well?
Yes, it does! And you can keep it frozen up to 3 months, just make sure you use proper freezer containers to protect it from freezer burn.

IM thinking of adding some chicken breasts to to soup. Maybe at the time when you add the beans and cook for 4 hours on high??

This is fabulous. We have made it several times and it is time to enjoy it again!
What a great meal! A very nice addition to my main course for dinner on those cold stormy days we get here in the Pacific Northwest.
Can I add chicken to this? If so – Is it possible to add it in raw and shred it or should I cook the chicken beforehand? Not sure because everything is slow cooked anyways!
You can definitely add some shredded (poached or rotisserie) chicken.
