Everybody loves a good side dish and this Roasted Zucchini and Squash is one of my absolute favourite dishes to make this time of year! It’s a delicious side to grilled or roasted meats, and it’s the perfect easy recipe to make with whatever easy weeknight meal you’re whipping up. It’s fresh-tasting, low in fat and carbs, and packed with delicious veggies!
Ingredients for Roasted Zucchini and Squash
- yellow summer squash
- zucchini
- salt
- olive oil
- Italian seasoning
- garlic powder
- fresh dill (or dried)

How to Roast Zucchini and Squash
- Choose fresh, local veggies. Garden-fresh zucchini from your own garden or the farmer’s market will optimize the flavour of this dish!
- Salt first, to remove water. Chop the zucchini and squash, add the salt and toss. Let it sit for a few minutes and then drain off any liquid.
- Use fresh herbs. Adding fresh dill to this dish gives it such a delicious, fresh flavour!
- Roast at a high temperature. To keep this dish from becoming too watery, roast it at 400 degrees Fahrenheit.

Roasted Zucchini and Squash
Recipe: Ingredients
- 2 medium summer squash skin on, cut into 2-inch cubes
- 2 medium zucchini skin on, cut into 2-inch cubes
- 3/4 teaspoon salt
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 2 teaspoons freshly chopped dill for serving
Recipe: Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Chop the veggies and add them to a bowl, tossing them with the salt. Let sit for about 5 minutes.
- Drain any water the veggies have released and pour them into a large baking dish (approximately 9-inch by 13-inch or comparable size).
- Drizzle the olive oil on top of the veggies, and add the Italian seasoning, garlic powder and onion powder. Toss very well in the pan.
- Roast in the oven at 400 degrees Fahrenheit for about 13-15 minutes until the veggies are soft slightly caramelized.
- Add some chopped fresh dill on top, and serve.
