I don’t know about you but I LOVE a good salad – it doesn’t matter what time of the year it is or what fresh ingredients are available, I’ll find a way to make a delicious salad to suit any season. Thankfully this Spinach Salad with Creamy Vinaigrette is made with easy-to-find ingredients, no matter the time of year, and it’s a delicious addition to any summer barbecue, easy weeknight meal, or holiday dinner! AND it’s under 90 calories per serving! One other fun fact about this salad – it’s the salad that was served at our wedding almost 15 years ago!!
Ingredients for Spinach Salad
To make this Spinach Salad with Creamy Vinaigrette you’ll need:
- fresh baby spinach (washed and dried)
- fresh white button mushrooms
- dried cranberries
- pecans
- mayonnaise
- sugar
- apple cider vinegar
- lemon juice

Spinach Salad with Creamy Vinaigrette
Ingredients
For the salad:
- 8 cups fresh baby spinach
- 10 small white button mushrooms sliced thinly
- 1/3 cup dried cranberries use more if desired
- 1/3 cup pecans whole or chopped
For the dressing:
- 6 tablespoons light mayonnaise or vegan mayonnaise
- 1 1/2 tablespoons granulated sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
Instructions
- Add the spinach, sliced mushrooms, cranberries and pecans to a large salad bowl.
- In a small bowl, whisk together the mayonnaise, sugar, vinegar and lemon juice until well combined.
- Drizzle the dressing over the salad, toss well, and serve.
