I don’t know about you, but I am SO hanging on to these last few weeks of summer. The month of July for us was rainy and cool and so it kind of feels like summer has just started. So you better believe that I’m making ALL the summer desserts these days – these Vanilla Bean Angel Food Cake Trifles with Fresh Berries are one of our favourites and I’m excited to be sharing them with you today!!

One of my favourite things about these trifles is that they’re basically a dessert version of leftovers! Made with leftover Angel Food Cake, they’re so easy to make! Just whip up a quick batch of my Easy Homemade Vanilla Bean Pastry Cream, wash some fresh berries, and you’re ready to assemble!
I love making these with my Homemade Angel Food Cake recipe, but you can easily make them with any leftover Angel Food Cake, or purchase one from your local bakery!

Vanilla Bean Angel Food Cake Trifles with Fresh Berries
These Vanilla Bean Angel Food Cake Trifles with Fresh Berries are the perfect easy dessert for summer!
Recipe: Ingredients
- 1/2 leftover Angel Food Cake (use my No Fail Angel Food Cake recipe!)
- 1 recipe Vanilla Bean Pastry Cream (link in the instructions below)
- 5-6 cups fresh blueberries, strawberries (sliced), raspberries and/or blackberries
- 2 cups whipped cream or your favourite whipped topping
Recipe: Instructions
- Cut the 1/2 Angel Food Cake into one-inch squares.
- Spoon some Vanilla Bean Pastry Cream into the bottom of 6 stemless wine glasses or mini-trifle glasses.
- Layer the Angel Food Cake squares, fresh berries and pastry cream, repeating until the layers reach the top of the glass.
- Top with a dollop of whipped cream or whipped topping and a fresh berry for garnish.
- Serve immediately.

Assemble the trifles just before serving as the Angel Food Cake squares can become soggy.
