These Pina Colada Popsicles are a refreshing summer treat! Inspired by everybody’s favourite tropical cocktail, they’re packed with fresh pineapple, coconut, and lime, and they’re a great healthy way to cool off this summer!

Is there anything better than a cool treat on a hot summer day? We are absolutely loving the warm weather so far this summer and we’re spending so much time outside playing! We just set up the kiddie pool last night and I can’t wait to spend most of my summer playing outside with the kids, splashing around and enjoying delicious homemade frozen treats. Because my kids are still preschool age I’m pretty careful about how much added sugar they consume. I know I say that a lot, and obviously my kids do eat sugar sometimes, but we like to avoid it as much as possible, especially when healthier options are available. I also try to stick to a reasonable grocery budget and buying boxes and boxes of frozen ice cream sandwiches or popsicles from the grocery store gets expensive! Homemade frozen treats are always my go-to way to keep my family eating a healthy diet in the summer and save money at the same time.Looking for more healthy frozen treats? And really, homemade treats like these Pina Colada Popsicles are just perfect. They’re sweetened only with fresh, ripe pineapple and they’re as creamy as they are refreshing thanks to some coconut milk which contains lots of healthy fats for my growing kids! I like to use reduced-fat coconut milk, because mama’s got to enjoy frozen treats sometimes too, but full fat coconut milk works perfectly well and makes them even more rich and creamy. If your pineapple isn’t quite at that very ripe stage yet, feel free to add a touch of honey to the mixture before you freeze the popsicles, just for a touch of extra sweetness, but my pineapple was nice and ripe so I skipped the honey this time. Pina Colada Popsicles
These Pina Colada Popsicles are a refreshing summer treat inspired by the tropical cocktail, and they're packed with fresh pineapple, coconut, and lime!
Recipe: Ingredients
- 1 cup coconut milk (I use reduced fat, but feel free to use the full fat variety if you prefer that)
- 1 small ripe pineapple , cored and chopped
- 1/4 cup flaked unsweetened coconut
- zest and juice of one lime
Recipe: Instructions
- Add all the ingredients to a blender and blend until completely smooth. Of course, you could add some rum to the mixture too, for an adult drink of course. But because we share these as a family I leave out the alcohol.
- Pour the mixture into Popsicle molds.
- Freeze in the Popsicle Moulds overnight or until solid. Garnish with some more flaked coconut and some lime zest.
- Enjoy as a refreshing hot-weather treat!
