I don’t know about you, but I am absolutely in LOVE with all the seasonal fruit this summer. Where I live in Romania people rely a lot on farmer’s markets for their fresh fruits and vegetables in the spring, summer, and fall and so I’ve begun taking several trips a week to the market with the kids to pick up the latest and freshest produce. Small town European living is a total dream, I’m not going to lie. I just adore walking along the cobblestone streets, hand in hand with my kids, my reusable grocery bag over my arm, walking from the farmer’s market to the butcher store and to the bakery to do my grocery shopping for the week. It’s been so nice to actually be able to eat foods that are locally produced and virtually free of preservatives and pesticides and to break away from the big-box-store grocery mentality. Although I have to admit, the farmer’s market scene is a double-edged sword for me because as wonderfully dreamy as it is to visit the market several times a week for 3 seasons of the year, it also means that everything is seasonal – we go several months of the year where we don’t see one fresh berry, cherry or peach, and it’s virtually impossible to find a butternut squash in the spring or summer. Coming from North America where everything is imported and the seasons don’t matter so much when it comes to fruits and vegetables, this has been a big adjustment for us! We’ve learned that eating seasonally is our new way of life, whether we like it or not!! These Strawberry Lemonade Popsicles are absolutely perfect for strawberry season, which is almost over where I live. The fresh strawberries and the fresh lemons in these popsicles just make them SO unbelievably delicious – just as refreshing as a tall glass of fresh strawberry lemonade!! Strawberry Lemonade Popsicles
Recipe: Ingredients
- 4-5 cups fresh strawberries washed and chopped
- juice of 5 lemons or 10 tablespoons of lemon juice
- 1/4 cup honey or other vegan honey substitute
- 1/2 cup water or sparkling water if needed
Recipe: Instructions
- Add the fresh strawberries, lemon juice, and honey to the blender and pulse until the strawberries are in tiny chunks.
- If the mixture is liquid enough to pour you won't need to add any water, but feel free to add up to 1/2 cup water (add a small amount at a time) to loosen up the mixture so you're able to pour it into the Popsicle moulds.
- Pour the mixture into your Popsicle moulds and freeze until solid before enjoying!
