I don’t know about you but I LOVE a good brownie! I don’t have much of a sweet tooth but sometimes you just need a bit of a treat that doesn’t completely derail your healthy eating jam – and these Easy Low Carb Brownies are perfect for that! They’re easy to make in one bowl (in about 30 minutes!), they contain basic ingredients you probably already have in your kitchen – especially if you’re not new to low carb baking – and they are truly the perfect low carb brownie: they’re dense and chewy, dark and chocolatey, and nice and moist. You’re going to LOVE them!
How to Bake Brownies with Almond Flour
- Use Almond Flour, not Almond Meal. Almond flour is ground finely for baking and Almond Meal contains larger pieces of almond. Since Almond Flour is finely ground it creates a more uniform texture when baking.
- Use Blanched Almond Flour. Blanched Almond Flavour is light in colour and contains no almond skin fragments.
- Aerate, scoop and level to measure. Measure almond flour just like regular flour: fluff it up, scoop and level for the perfect measurement.
- Sift well. For perfectly smooth baked goods with Almond Flour, sift all the dry ingredients together to remove any large pieces.
- Combine the dry ingredients together first. Combine all the dry ingredients with the Almond Flour before adding it to the wet ingredients, to make sure all the ingredients are distributed evenly.
- Let your brownies cool completely before slicing. Brownies made with almond flour need to cool to set fully. If you cut into them too soon they’ll become crumbly.

Easy Low Carb Brownies
Recipe: Ingredients
- 1/2 cup unsalted butter melted
- 1/2 cup Stevia brown sugar plus 2 tablespoons (I like the Truvia brand).
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup almond flour finely ground (not almond meal)
- 1/2 cup unsweetened cocoa powder
- 2 teaspoons espresso powder (optional)
- a pinch of salt
Recipe: Instructions
- Preheat your oven to 350 degrees Fahrenheit and prepare an 8-inch by 8-inch square pan by greasing it and lining the bottom and 2 sides with parchment paper.
- To a large bowl add the melted butter, Stevia brown sugar, eggs, and vanilla. Whisk them together until the mixture is smooth and all the ingredients are well combined.
- Place a fine mesh sieve over the bowl with the wet ingredients and add the almond flour to it, along with the cocoa powder, espresso powder, and salt.
- Push the dry ingredients through the sieve with a spoon. This will leave any large chunks behind (discard these).
- Combine the wet and dry ingredients with a silicone spatula or wooden spoon until well mixed and no streaks of flour remain.
- Pour the batter into the prepared baking pan and spread it out into the corners of the pan, smoothing out the top.
- Bake for about 16-18 minutes at 350 degrees Fahrenheit.
- Let the brownies cool completely in their pan before slicing and enjoying.

Hello can we use coconut sugar instead? If yes, is the same amount

Yes, you can use coconut sugar, although because Stevia is sweeter than other sugars you might not find the coconut sugar sweet enough. But the texture of coconut sugar would work in this recipe, in the same measurement as the baking Stevia. Happy Baking!

I have read and used Monk Fruit Sweetener instead of Stevia, because it has no bitterness, which I experienced in baking using those products. WILL MONK FRUIT SWEETENER offer the same results.? thankyou
I’ve never tried using Monk Fruit Sweetener so I couldn’t tell you. The reason I use stevia brown sugar here is because of the moisture that it adds so substituting that might leave you with dry brownies. If you try it, please let me know how it went. Happy baking ☺️
Hi Chrissie. This recipe looks really great. I would love to try this so I bought almond flour especially for it but want to use normal sugar because sweetners are very expensive in South Africa. Can I use normal sugar and what quantity ? I don’t know Stevia and not sure what the ratio would be. Would appreciate some guidance. Thank-you.
Baking stevia can be used in a 1 to 1 ratio with sugar, so simply replace the stevia with sugar in the same amount.
