To make this Garlic Noodles Recipe you will need:
- rice noodles (Pad Thai noodles)
- sesame oil
- vegetable or olive oil
- soy sauce (or gluten-free soy sauce)
- fresh garlic
- fresh ginger
- green onions
- brown sugar (or use coconut sugar)
- sesame seeds for garnish (optional)
How to Make Garlic Noodles
Time needed: 10 minutes
Follow these steps for the BEST garlic noodles ever!
- Use a neutral oil.
Sesame oil has a very strong flavour, so combining it with a neutral vegetable oil gives your pan enough oil without an overwhelming flavour.
- Avoid high heat.
Green onions burn easily, and adding soy sauce and sugar could create a burnt mess over too high a heat, so cook the sauce over medium-low heat.
- Don’t over-cook the noodles!
Pay attention to the directions on the package of rice noodles you’re using. Most rice noodles only need 3-4 minutes under hot water to soften. Drain them immediately when soft.
- Don’t forget the sugar!
Adding a small amount of brown sugar adds a ton of flavour to this dish. Don’t skip it!
- Serve immediately.
These noodles are best served hot right after they’re made.

This recipe is easy to make gluten-free since it calls for rice noodles. Simply choose gluten-free soy sauce to ensure it’s completely gluten-free.

Garlic noodles are made from pad thai-style rice noodles and a sweet and savoury sauce that’s flavoured with spring onions, sesame, ginger, and lots of garlic!
Can I make this recipe with regular pasta instead of rice noodles?
Yes! Simply boil the pasta according to the package directions and add directly to the pan with the sauce as outlined in the recipe. If using regular pasta, we recommend spaghetti or spaghettini noodles, or other long and thin noodles.
Can I make this recipe ahead of time?

- 1 Medium Bowl
Recipe: Ingredients
- 9 oz rice pad thai noodles
- 1 tsp sesame oil
- 2 tbsp vegetable oil or olive oil
- 1 tbsp minced garlic about 3 large cloves
- 1 tsp grated ginger
- 1/2 cup green onions chopped on a bias
- 3 tbsp brown sugar
- 1/4 cup soy sauce
- a couple pinches of chili flakes optional
To serve:
- chopped green onions
- sesame seeds
Recipe: Instructions
- In a large pan over medium-low heat, heat up the sesame oil and vegetable oil.
- Add the garlic, ginger and green onions and sauté until fragrant.
- While the onions are softening, place the dry noodles in a bowl and pour boiling water over them until they're submerged. Let the noodles sit in the hot water to soften (follow the package directions for best results – most noodles take about 3-4 minutes).
- Add the brown sugar and the soy sauce to the onions in the pan and mix to form a sauce. Cook until the sauce starts to thicken slightly.
- Strain the noodles and add them to the pan with the sauce. Toss the noodles in the sauce until coated.
- Serve hot with green onions and sesame seeds. These noodles can be eaten by themselves or enjoyed as a side dish.
