One Pan Mexican Style Sloppy Joes
Recipe: Ingredients
- 1 1/2 pounds lean ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced or pressed
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 cup frozen or canned corn
- 1 cup canned black beans
- 2 tablespoon taco seasoning
- 2 1/2 cups tomato sauce
- 2 tablespoons water
- 1 tablespoon cornstarch
- Fixings: salsa, sour cream, lettuce, tomatoes, avocados, and/or cheese.
Recipe: Instructions
- Heat a large non-stick skillet over medium-high heat.
- Brown the ground beef in the pan, adding the onions and garlic about half way through cooking.
- Add the bell peppers, corn and black beans and stir to combine.
- Stir in the taco seasoning.
- Reduce the heat to medium-low and add the tomato sauce. Mix the water and cornstarch in a small bowl and add that mixture too.
- Stir well to combine, cover and simmer for 15-20 minutes.
- Serve on hamburger-style buns with salsa, sour cream, lettuce, tomatoes, avocados, and cheese.
