Happy Monday friends! We’re still in the heart of summer where we live, which means I’m still loving all the healthy, fresh salads I can get my hands on! This White Bean Salad with Tomatoes is one of my favourite dishes to make on a hot summer day, but it’s also one of my go-to protein-packed lunches all year around.

White Bean Salad with Tomatoes
Ingredients
- 30 ounces white beans rinsed and drained 2 standard-sized cans
- 2 1/2 cups chopped cucumbers
- 2 1/2 cups halved cherry tomatoes
- 1 large red onion chopped
- 2 teaspoons chopped fresh parsley
- 2 teaspoons chopped fresh basil
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
Instructions
- Rinse and drain the white beans and add them to a large bowl.
- Add the cucumbers, tomatoes, and red onion, along with the fresh herbs.
- Add the olive oil and the lemon juice and toss everything together well.
- Serve, or store in the fridge for a few hours until ready to serve.
