You guys know how much I love easy weeknight meals! This Salsa Chicken recipe is one of my favourite low carb main dishes to make on busy weeknights. It’s easy to throw together in about 10 minutes or less and it bakes to perfection in about 25 minutes!
My family loves this salsa baked chicken and I often serve it with a big side salad to complete the meal. And I love to save the leftovers for lunches the next day. Baked Salsa Chicken Recipe
Recipe: Ingredients
- cooking spray
- 4 chicken breasts
- 2 tablespoons taco seasoning low sodium
- 1 1/2 cup salsa (sugar free)
- 3/4 cup shredded cheese (we like a blend of Cheddar and Monterey Jack)
- sour cream, sliced jalapenos for serving (optional)
Recipe: Instructions
- Preheat your oven to 375 degrees Fahrenheit and spray a medium-sized casserole dish with cooking spray.
- Rub the taco seasoning onto the chicken breasts on all sides and place them in the prepared casserole dish.
- Pour the salsa on top and spread it out over the chicken breasts.
- Top with the shredded cheese and bake for about 20-25 minutes, or until an instant read thermometer inserted into the chicken breast reads 165 Fahrenheit (74 Celsius).
- Serve hot from the oven with sour cream and sliced jalapenos.
