I don’t know about your family, but in our family we LOVE seafood. In fact, I try to cook fish or shrimp about once a week both for health reasons and because everybody loves it! This Cajun Shrimp with Creamy Parmesan Polenta is my personal favourite way to enjoy shrimp these days and I’m really excited to be sharing this recipe with you today!
How to Make Creamy Polenta
Polenta, or grits as they’re called in the US, is a food that sometimes gets a bad rap. If cornmeal is overcooked with not enough liquid they can be tough and dry and flavourless, but with a little bit of creaminess and flavour added it makes the PERFECT base for cajun shrimp, salmon, stewed beef, or other flavour-packed main dishes. I love cooking polenta with some beef or chicken stock instead of water, using milk or even half & half cream, and adding some parmesan for some savoury flavour. Seriously, this creamy parmesan polenta is to DIE for, and it’s SO simple to make! Just combine all the ingredients together while cold and place the pan over the heat. Mix gently and constantly until the mixture comes to a boil and thickens, then add the parmesan and stir it in just until melted. And that’s it!!

Since the cajun shrimp has a bit of spice to it, I like making my own cajun season to use in this recipe. Easy Cajun Shrimp with Creamy Parmesan Polenta
Recipe: Ingredients
For the shrimp:
- 2 tablespoons olive oil
- 1 pound shrimp tails and shells removed
- 3 cloves garlic finely minced
- 2 tablespoons cajun seasoning
- a pinch or two each of salt and pepper
- 1 tablespoon lemon juice
- 2 tablespoons white wine
For the Polenta:
- 1 cup finely ground cornmeal
- 2 cups half and half cream use milk, if desired
- 2 1/2 cups chicken or beef stock
- 1 1/2 teaspoon salt
- 1/2 cup freshly grated parmesan
- chopped parsley for serving
Recipe: Instructions
For the shrimp:
- Heat a large heavy-bottomed skillet over medium high heat and add the olive oil.
- Add the shrimp, the garlic, cajun seasoning and salt and pepper and toss in the pan until everything is well coated. Let cook just until one side of the shrimp turns pink.
- Flip the shrimp and add the white wine and lemon juice. Let the shrimp continue to cook just until they're completely pink and the wine has reduced to almost nothing.
- Turn off the heat under the pan and let the shrimp stay in the warm pan until ready to serve.
For the polenta:
- While the shrimp cooks, add the cornmeal, half and half, stock and salt to a large saucepan over medium high heat.
- Stir the mixture together with a whisk as it heats up and comes to a boil.
- Once it reaches a boil and thickens, remove it from the heat and add the parmesan.
- Whisk in the parmesan just until it melts.
- Serve the polenta in bowls (just under 1 cup of cooked polenta per serving) and top it with the shrimp and some freshly chopped parsley (optional).
