If you are having trouble with this butter chicken recipe, follow the solutions we recommend below.
There are diced cooked vegetables in the sauce but it you prefer smooth sauce use an immersion blender before the chicken is added to blend the vegetables with the sauce.
Be sure to follow the recipe and avoid adding extra coconut milk. Adding too much can add a coconut flavour. Feel free to substitute any dairy-free cream in this recipe if you don’t enjoy coconut.
Once the chicken is cooked, remove the lid and cook the sauce for an additional 5 minutes or so, reducing the sauce slightly. This will help the sauce thicken.
Don’t forget to toast the spices to release all the flavour into the sauce. Also, use full fat coconut milk for the most flavour and give time for the sauce to rest, once it is complete, to allow the flavours to meld.

How to Make Butter Chicken (Dairy-Free)
Time needed: 40 minutes
Follow these tips for the perfect dairy-free butter chicken.
- Choose the right pan.
Heat a large heavy-bottom skillet over medium-high heat and add the olive oil.
- Sauté first.
Once the skillet is heated, add the onion and garlic. Sauté for a moment, until fragrant.
- Toast the spices.
Add the ginger, turmeric, garam masala, cumin, chili powder, red pepper flakes, cinnamon, and lime juice. Stir everything around to toast the spices.
- Add in the vegetables.
Add the carrots and red pepper, and sauté until the vegetables are slightly soft.
- Add in the chicken.
Season the chicken pieces with salt and pepper and add them to the skillet with the veggies, stirring everything together well as the chicken begins to cook.
- Blend the sauces.
Add the tomato sauce and full fat coconut milk and stir well to combine.
- Let it cook.
Reduce the heat to medium and cover the skillet, letting the chicken cook for about 15 minutes, or until the chicken is cooked through completely. Remove the lid and cook for an additional 5 minutes or so, reducing the sauce slightly.
- Serve.

Where is the butter?
As this is a dairy free version of the dish, all fats that give the sauce its classic creamy texture come from the coconut milk.

Could I use a slow cooker to make this?
I’d recommend making it on the stove top and then transferring to a slow cooker to cook on low to finish cooking. The liquid amounts in slow cooker recipes are often different than stove-top ones, so it might end up being very liquidy if you made it in the slow cooker.
Would like it to be a bit more spicy.

My partner absolutely loves butter chicken but dairy is not his friend. I made this the other night for one of our weekly meal prep meals and I’m so glad I doubled the recipe because it was so delicious! I omitted the red pepper flakes and halved the garam masala and we found the temperature just right (our 10 year old also really enjoyed it)! We also cooked our meat separately from the sauce as we like more protein on hand! Will definitely be in our rotation for meal prep meals! Thanks very much!!
