I don’t know about your family but chicken makes it onto our meal plan at least twice each week (sometimes more)! To keep it interesting I’m always looking for new ways to prepare different cuts of chicken – sometimes we enjoy drumsticks, sometimes thighs, breasts, wings or legs, and sometimes we keep the bones in and skin on, and other times we opt for boneless skinless. The sky is the limit, really, when it comes to chicken and this Easy Lemon Herb Roasted Chicken is just one of our favourite ways to enjoy chicken this time of year.
There’s nothing quite like fresh herbs and lemon when it comes to creating lots of flavour with minimal effort and this lemon herb chicken is SO simple and SO flavourful! Simply brown the chicken in a heavy skillet in a little bit of olive oil, mix the butter, herbs and lemon, drizzle the butter mixture over the chicken and bake to perfection!

Easy Lemon Herb Roasted Chicken
Ingredients
- 1 tablespoon olive oil
- 8 chicken drumsticks bone-in, skin-on
- salt and pepper
- 1/3 cup unsalted butter melted
- 1 teaspoon garlic powder
- 1 1/2 teaspoons dried parsley
- 1 teaspoon freshly chopped sage (use dried sage, if desired)
- juice of one lemon
- 1 lemon sliced
- fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- Heat a large oven-safe (cast iron) skillet over medium high heat and add the oil.
- Coat the pan with the oil and add the chicken drumsticks, seasoning them with salt and pepper before adding them to the pan.
- Brown the chicken on all sides just to give it some colour, for a couple minutes per side.
- While the chicken browns, combine the melted butter, garlic, herbs, and lemon juice. Slice the lemon.
- Brush the chicken with the melted butter mixture and pour any remaining over the chicken in the skillet. Add the lemon slices in between the chicken pieces and add the pan to the oven.
- Bake for about 15-20 minutes, or until the chicken has reached an internal temperature of 165 degrees Fahrenheit (74 Celsius).
- Serve with potatoes, rice, or any side dishes you prefer.

Yes, although the chicken might dry out a bit. I’d suggest covering the chicken with foil in this case for at least part of the baking time.
