I don’t know about you, but I LOVE mushrooms. I eat them raw on salads, raw with dips or hummus, scrambled with eggs in the morning, fried over steak or chicken, in my favourite mushroom sauce, and even roasted like these Garlic Butter Roasted Mushrooms! I feel like there are two kinds of people in life: those who love mushrooms and those who can’t stand them – I’m definitely a mushroom lover!!
Truly, there’s no better way to prepare mushrooms than in my tried and true Cast Iron Pan (affiliate link)! I love using it to fry mushrooms on the stove top but since it’s oven-safe it’s also great for roasting, and these Garlic Butter Roasted Mushrooms are just total perfection when roasted in anything cast-iron. It’s creates the most beautiful crust and intense savoury flavour!
But if you don’t have a cast iron pan, a regular old baking sheet will do just fine. Just be sure to use enough fat to prevent sticking and to encourage browning – since that’s where all the flavour comes from! Once you try these Garlic Butter Roasted Mushrooms you’ll want to serve them with all your favourite main dishes!

Garlic Butter Roasted Mushrooms
Ingredients
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter or vegan butter
- 4 cloves garlic minced
- 2 sprigs of fresh thyme, leaves only plus more for garnish, if desired
- 20 jumbo white mushrooms cut in half
- sea salt and black pepper
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- Heat a large cast-iron skillet over medium-high heat and add the olive oil.
- Add the butter and let it melt.
- Add the garlic and thyme leaves and cook just until fragrant.
- Add the mushrooms and salt and pepper, and toss well to coat the mushrooms in the garlic butter mixture.
- Place the skillet in the oven and roast for about 25-30 minutes until the mushrooms have browned. Toss once in the middle of roasting, if necessary.
