Being a mom of two young kids who, thanks to the events of the past year spend MOST of their time at home (we’re a homeschooling family now!), I’m always looking for new healthy homemade snacks for my kids to enjoy that are nutritious, low in sugar, and packed with veggies and fruit whenever possible. These Healthy Carrot Cake Oatmeal Cookies are a delicious treat our kids love and I know you’re going to love them too!
These Healthy Carrot Cake Oatmeal Cookies are cake-y and moist, and they’re made with rolled oats, whole wheat flour, shredded carrots and honey. They’re great for a quick grab-and-go breakfast and they make a great after-school snack for the kids! And best of all, you can customize them to you family’s tastes by adding up to 3/4 cup of chopped nuts, chopped dried fruit, or even peanut butter for extra protein!
How to Make Healthy Carrot Cake Oatmeal Cookies
Ingredients for healthy oatmeal cookies:
- Rolled oats
- Whole Wheat Flour
- Baking soda
- Cinnamon
- Nutmeg
- Cloves
- Ginger
- Salt
- Eggs
- Honey
- Vegetable Oil (or substitute melted coconut oil)
- Shredded carrots
- Chopped nuts or dried fruit (optional)
How to make healthy oatmeal cookies:
Mix the dry ingredients together in a bowl with a fork or a whisk. Add the eggs, oil and honey to a liquid measuring cup and whisk with a fork to combine. Pour the liquid ingredients into the dry ingredients and add the shredded carrots and any chopped nuts or dried fruit. Combine everything together and drop by the tablespoon onto a parchment-lined baking sheet and bake for 16-18 minutes at 350 degrees Fahrenheit. Let cool, and then enjoy!

Healthy Carrot Cake Oatmeal Cookies
Recipe: Ingredients
- 1 cup rolled oats
- 1 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/4 teaspoon ginger
- 1/4 teaspoon salt

- 1/3 cup liquid honey or substitute maple syrup if desired
- 1/4 cup vegetable oil or substitute melted coconut oil if desired
- 1 cup shredded carrots
- 3/4 cup chopped nuts or dried fruit OPTIONAL (we like to add chopped walnuts or dried cranberries)

- Preheat your oven to 350 degrees Fahrenheit and prepare a large baking sheet by lining it with parchment paper.
- Mix the dry ingredients together in a bowl with a fork or a whisk.

I found I had to add more honey/maple syrup as my first batch was dry and bland. I did add dried cranberries. Each oven is different, but I found 10-12 minutes was enough. I’ll try them again with these modifications as I think it is a healthy choice. Thanks

This is a five star recipe for those looking for a HEALTHY cookie. They are not a very “sweet” cookie, but I thought they had good flavour and were moist. I used maple syrup as the sweetener and added dried cranberries as the recipe suggests. I did have to adjust the cooking time to only 12 minutes.

Yum! I added walnuts, unsweetened coconut flakes, and used honey as sweetener and coconut oil. I made 29 “cookies” with my medium melon scoop. More like a yummy little muffin snack but tasty and not sweet. I didn’t have cloves and ginger…
