Dry chicken breasts cooked in the same old way can get pretty monotonous – we like to shake things up every now and then with flavour-packed dishes like these Honey Mustard Chicken Thighs. They’re juicy and delicious, especially when served with a tangy honey mustard sauce!
We love to enjoy this chicken recipe alongside a salad and our favourite creamy mashed potatoes made in the Instant Pot. The honey mustard sauce in this dish makes a delicious gravy, and together it makes the perfect comforting meal!

Honey Mustard Chicken Thighs

- Oven-safe skillet
Recipe: Ingredients
- 1 tablespoon olive oil
- 8 bone-in skin-on chicken thighs
- salt and pepper
- 1 large onion cut into wedges
- 3 cloves garlic finely minced
- 1 to 2 tablespoons butter
- 3 tablespoons all purpose flour
- a pinch of salt
- 1/2 cup white wine (or add 1/2 cup chicken stock instead, with a small splash of white wine vinegar)
- 2 cups chicken stock
- 2/3 cup liquid honey
- 2 tablespoons grainy mustard
- 2 tablespoons dijon mustard
- chopped fresh parsley for serving (optional)
Recipe: Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Heat a large oven-safe skillet over medium-high heat. Add the olive oil.
- Season the chicken thighs on both sides with salt and pepper and place them skin down in the hot pan. Brown the chicken on both sides (for about 5-6 minutes per side).
- Add the onions and garlic about half way through the browning process and let them caramelize in the hot pan as well.
- Once the chicken is browned, remove it, along with the onions, to a plate and set it aside. The point is not to cook the chicken completely at this stage - only to get a bit of colour and caramelization on it.
- Add the butter to the hot pan. Once it's melted, add the flour and whisk well for a few minutes as the flour toasts.
- Add a pinch of salt and slowly pour in the wine, whisking continuously.
- Once the wine is added, continue whisking as you add the chicken stock. Whisk as a smooth sauce forms.
- Let the sauce cook for a minute or two - you'll notice it thicken as you whisk gently.
- Whisk in the honey and mustards until combine.
- Nestle the chicken thighs into the sauce and add the onions throughout.
- Place the skillet, uncovered, in the 350 degrees Fahrenheit oven and bake for about 25 minutes, or until the chicken is cooked through to an internal temperature of 74 degrees Celsius (165 degrees Fahrenheit.
- Serve the chicken in the sauce with rice or mashed potatoes, and your favourite side dish.
