I don’t know about you but I’m always looking for new ways to enjoy breakfast in the morning, or any time of the day, really! As a busy working mom making a healthy breakfast for myself, in advance, is always a good idea and this Low Carb Ham and Broccoli Crustless Quiche is on repeat in my kitchen during my busy weeks!
An Easy Low Carb Breakfast
I love eggs in almost any form, whether it’s a frittata, devilled eggs, egg salad – I’m here for it, so this Low Carb Ham and Broccoli Crustless Quiche is a total favourite of mine. It’s a great way to eat green veggies for breakfast (or any time of day) and with only 2 grams of carbs per serving it’s a GREAT choice for anyone eating a diet lower in carbs.

To make this recipe you’ll need:
- large eggs
- milk
- half and half cream
- cheese
- broccoli
- ham
- salt and pepper

How to Make Crustless Quiche
Making low carb quiche is SO easy!
- Grease your baking dish well. There’s nothing worse than eggs that stick to the pan – grease your baking dish well for easy removal.
- Skip the crust. Simply add the quiche mixture straight to the greased baking dish! You won’t even miss the crust!
- Add veggies and protein. Chop the ham and broccoli nice and small so it cooks quickly in the oven!
- Add some cream. If you’re skipping the carb-filled crust, adding some half and half gives the quiche a decadent and satisfying flavour.
- Add some cheese. Cheese adds such a delicious savoury flavour to quiche, and it helps create a nice smooth texture too!
- Don’t over-bake! Be sure to bake your quiche only as long as the recipe calls for. Removing it from the oven when it just becomes set will make sure your quiche is cooked through but not rubbery and over-cooked.

Low Carb Ham and Broccoli Crustless Quiche
Recipe: Ingredients
- 6 large eggs
- 1/3 cup whole milk
- 1/3 cup half and half cream (or substitute milk, if desired)
- 1 cup shredded cheddar cheese
- 1/2 cup chopped ham
- 1/2 cup chopped broccoli florets
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- chopped green onions for garnish (optional)
Recipe: Instructions
- Preheat your oven to 350 degrees Fahrenheit and grease a 9-inch pie dish (or equivalent baking dish) with butter or cooking spray.
- Crack the eggs into a bowl and add the milk and cream.
- Whisk the eggs, milk and cream together well until the mixture is smooth and well combined.
- Add the shredded cheese (reserve about 1/4 cup for the top), the ham, the broccoli and salt and pepper, and stir in gently until combined.
- Pour the mixture into the greased baking dish and top with the remaining shredded cheese.
- Bake at 350 degrees Fahrenheit for about 30-35 minutes, or until the top is golden brown and there's only a very slight jiggle in the centre.
- Remove the quiche from the oven and let it cool for at least 10-15 minutes before slicing and serving with some chopped green onions.

I have made crustless quiche several times but not with broccoli. I even enjoy it cold the next day. I use zucchini and sauté it for a few minutes with onion and bell pepper. I then add some cubes of ham and put all in baking dish and pour eggs over all. I add parmesian sometimes to eggs before pouring over vegies. I can’t wait to try your broccoli quiche!!!

Would you steam the broccoli first so it gets done? I need to make a 9×13” dish would I double this recipe?
