Here’s a list of all our BEST tips and tricks for making the perfect homemade chicken noodle soup!
Start by sautéing onions, garlic, celery, and carrots to build a flavourful base for the soup. Sautéing the vegetables first creates a lot more flavour than simply boiling them in liquid, so be sure not to skip this step.
Use a high-quality stock, either homemade or store-bought. Vegetable or chicken stock both work very well.
You can cook fresh chicken or use rotisserie chicken by removing the skin and cut into bite sized pieces for a quick option. Another option is keeping some grilled or poached chicken breast in your freezer to use in both soups and salads.
We like to use small pasta that fits on a soup spoon such as ditalini, fusilli, macaroni, mini penne, or even farfalle are great for the soup. Spaghetti, broken into thirds, works in a pinch too.
You can toss in celery, carrots, frozen green beans, frozen corn, peas, or spinach, whatever suits your tastes and preferences.
Dried herbs, like thyme, oregano, parsley, can be a powerful way to add flavour, so be sure not to skip them.
If your stock is already salted, be cautious with adding more salt during the cooking process. Adjust the seasoning at the end of cooking to make sure it tastes just right.
Here’s a list of some common issues you might encounter when making homemade chicken noodle soup and how to fix them!
Cooking the chicken for too long will result in tough, dry meat. It’s important not to over-cook it, so follow the recommended cook time and quick release the pressure on the instant pot.
Make sure to deglaze the bottom of the pot after sautéing the vegetables or pre-cooking the chicken. If the pot is not scraped clean of stuck on bits of food when the pressure cooking setting is used, the burn notice may go on.
If the soup lacks flavour, adjust seasoning with salt, pepper, and dried herbs. These can add a lot of flavour. You can sauté the veggies at the beginning of the cooking process to add flavour.
If the soup is too thick, add some more stock or water to reach the right consistency.
If you add the pasta before pressure cooking, the noodles will be mushy. It is best to add the pasta after the pressure cooking and use the warm up setting to cook the pasta.
Skim the fat off the top of the soup with a spoon. Another option is to put it in the fridge until it cools, then skim the solidified fat off the top. Reheat the soup and serve.

- 1/2 teaspoon dried thyme

Recipe: Instructions
- Turn the Instant Pot onto Sauté mode and add the olive oil.

- Add the stock and stir everything to combine.
- Add the lid, set the valve to sealing and set the Instant Pot to cook on High Pressure for 8 minutes.

- Once the 10 minutes is up, release any pressure manually.

Recipe: Notes
Storage instructions
This soup keeps well in an airtight container in the fridge for 3-5 days.Freezing instructions
You can freeze this soup in freezer safe containers for up to 3 months. If you’re planning to freeze it, we recommend preparing the soup without the pasta as the pasta won’t freeze well in the soup. For best results, cook the pasta separately and add it to each bowl as you serve the soup. This will prevent the pasta from becoming over-hydrated as it sits in the liquid, even when frozen.Recipe: Nutrition

Thanks Julie!🙂
This was a wonderful recipe except this is a lot of chicken! I used two bone-in chicken breasts and two leg quarters (equalled less than 5 lbs total) and I didn’t use half of the meat. Not bad to have extra cooked chicken but next time I will probably use 1/2 the amount.
I’m so happy you enjoyed it! Thank you for taking the time to leave your feedback! Happy cooking ☺️
