This Healthy Cucumber Lemonade recipe is the perfect naturally-sweetened refreshing drink for summer! It’s made from blended cucumbers, fresh lemon juice, and honey, so it’s the perfect healthy refreshment for warm days and summer parties!
Estimated reading time: 7 minutes
We don’t know about you, but drinks like this Healthy Cucumber Lemonade make our summers so much better. With all the barbecues and summer parties, it’s really hard to say no to sugary cocktails and soda pop that seem to re-appear every year as soon as the weather gets warm.
To save all those empty calories and to boost our nutrition, we love creating refreshing homemade drinks like this Cucumber Lemonade to enjoy on hot summer days. We’ve already shared a few of my favourite cool mocktails with you, like this Watermelon Green Tea Refresher. We have perfected this lemonade and figured it was time to share it since cucumber and lemon go so perfectly together and they make this Cucumber Lemonade just explode with flavour.
Here are just a few reasons we love this healthy cucumber lemonade!
- It’s HEALTHY. Cucumbers and lemons are packed with nutrients, and since this lemonade is made with honey instead of sugar, it’s a healthier choice than most conventional lemonades.
- It’s made with NO REFINED SUGAR. Honey is a liquid sweetener so it dissolves easily in liquid, and it adds a lot more flavour than sugar does. Because honey tastes sweeter than sugar, you’ll probably find yourself adding less honey than you would sugar to your lemonade, making each glass lower in calories.
- It’s EASY TO MAKE. It’s made with only a few ingredients and it’s ready in 10 minutes. We love making a big batch and enjoying it throughout the week.
Follow these pro tips to take your Cucumber Lemonade to the next level!
Make sure to use fresh cucumbers and fresh lemon juice to give the best fresh flavour. Bottled lemon juice is more acidic and can change the the flavour of the lemonade. Always opt for fresh!
English cucumbers are the best for flavour and they have the fewest seeds to deal with. Other cucumbers may be more bitter than sweet (especially the skin) and that will affect the flavour of the lemonade.
Make sure to strain the fresh cucumber juice of all the seeds and pulp to ensure the smoothest lemonade.
Taste test the lemonade mixture to see if it’s too sweet or too tart for your tastes. Adjust as needed with honey or more fresh lemon juice to achieve the taste you’re looking for.
The lemonade tastes most refreshing when it has been chilled first. This allows the flavours to blend together to give the most flavourful lemonade.
Here are some issues you might encounter when making this recipe and how to fix and prevent them!
If the cucumbers are not fresh and firm, the flavour will be the affected. Be sure to choose fresh, ripe English cucumbers for the best flavour.
It is important to follow the recipe to keep the lemonade flavours balanced properly. Taste test to see if you have the balance you’re looking for. If not, adjust it by adding some more water and lemon juice.
If the cucumber pulp is not strained through a fine mesh sieve, some cucumber pulp and seeds can make it into the mixture. This can make the lemonade cloudy and gritty to drink. Make sure to strain the juice properly before using it.
Make sure to follow the recipe to ensure there is a balance between the tart lemon juice and the sweetness of the cucumbers and the honey. Add in a little bit at a time and taste test it until you have the desired taste.
Adding too much ice and water to the pitcher will water down the lemonade mixture. Be sure to follow the recipe and avoid adding too much ice so you don’t water down the lemonade too much. Tasting as you go helps prevent this.

Right now lemons are very expensive in this area – can you use lemon juice from a jar? If yes, how much?
You could, although I wouldn’t recommend it as conventional lemon juice from a jar or bottle is awfully concentrated and tastes very acidic. Juicing one lemon yields about 2 tablespoons, so that should give you an idea 🙂
