Happy Friday, friends! If you’re a faithful reader of mine you will already know about my current love affair with lemonade. Thankfully where we live summer starts nice and early and so even though it’s barely May we’re already in shorts and tank tops enjoying the afternoon sunshine and almost-30-degree temperatures (that’s around 80-90 Fahrenheit, for my American readers). And in my view, weather like that calls for a nice tall glass of this Healthy Blueberry Lemonade – am I right??
I’ve already shared my favourite Healthy 3-Ingredient Lemonade recipe with you, so if you’re more into basic lemonade then that one is for you. But sometimes I like to mix it up a little bit with recipes like this Healthy Blueberry Lemonade, my Healthy Strawberry Lemonade or even my favourite Healthy Cucumber Lemonade. Blueberry Lemonade

- 5 lemons, juiced
- 1/3 cup honey or other vegan honey substitute
- 1 cup fresh blueberries
- 4 cups water (or, 2 cups water and 2 cups sparkling water)
- fresh blueberries and fresh lemons for garnish
- ice (optional)
Recipe: Instructions
- Add the juice of the 5 lemons to your blender, along with the honey, fresh blueberries and one cup of the water (do not add sparkling water to the blender!).
- Blend on high speed until smooth.
- Strain and pour into a pitcher, along with the rest of the water. Stir well.
- Top off with ice, a few fresh blueberries and lemon slices, and some sparkling water (if desired).
