1. Ground Meat: We make meatloaf with ground beef, but a mix of ground beef and pork also creates a rich flavour profile. Opt for regular or lean meats, but not extra-lean ground meat as this can make for a dry meatloaf.
2. Filler: Bread crumbs or crushed crackers add texture and help bind the meatloaf together. For a gluten-free twist, try using gluten-free quick oats.

1. Choose the right meat. We recommend regular or lean ground beef for meatloaf because it contains enough fat to keep the meatloaf nice and juicy. While extra-lean ground beef is healthier and lower in fat, it lacks fat which can make your meatloaf dry and less flavourful.
2. Start with the flavour paste. Mix all the ingredients together before adding the meat. This will help the flavours distribute evenly throughout the meat as you mix everything together and prevent over-mixing.
3. The Meat-to-Filler Ratio: Strike a balance between the meat and the other ingredients to achieve the ideal texture. Too much filler can make your meatloaf dry, while too little can result in a dense, heavy loaf.
4. Avoid over-mixing. Over-working the meat can cause the meatloaf to develop a dry, tough and dense texture. Mix just until combined.
5. Seasoning liberally: Don’t be shy with seasonings. Meatloaf can handle bold flavours, so feel free to experiment with herbs and spices and be sure to add the glaze for a ton of added flavour.

Follow these steps for the perfect meatloaf.
- Make a flavour paste.
Add all the ingredients to a large bowl, except the meat. Mix everything together very well until it’s combined.
- Don’t over-mix.
Add the meat and mix with your hands until the paste you created in the bottom of the bowl is well distributed throughout the meat mixture. Avoid over-mixing; mix only until completely incorporated.
- Form the loaves.
Preheat the air fryer to 400 degrees Fahrenheit (190 Celsius). Pierce holes in the bottom and sides of the 2 aluminum loaf pans with a toothpick or wooden skewer. Divide the meat mixture between loaf pans. Press the meat mixture down into the pans so no air pockets remain.
- Air fry.
Air fry for 18 minutes. While the meatloaf cooks, mix together the glaze ingredients.
- Glaze.
Carefully tip the meatloaf out of the loaf pan into the air fryer, bottom side up. Spoon the glaze onto the loaves, coating them generously on all sides. Air fry for 3-5 more minutes until the glaze looks toasty and the internal temperature is 160 degrees Fahrenheit. (71 degrees Celsius).
- Let it rest.
Let the loaves rest for 5 minutes before slicing and serving.
Can I substitute ground turkey or chicken for beef in my meatloaf?
