This black bean salsa is great as an appetizer or snack with some homemade guacamole and corn tortilla chips, but it’s also the perfect condiment to any Mexican main dish, especially my vegetarian tacos. Black Bean Salsa Ingredients
In addition to the black beans, corn, and avocado, there are just a few simple, but flavorful ingredients in this easy homemade salsa recipe: 1 cup corn (fresh cooked or frozen) 1/3 cup finely diced red onion 1 large tomato, finely diced 1/3 cup black beans (canned) 1 avocado, chopped 1-2 tbsp chopped cilantro (to taste) juice of 1 lime a pinch or two of sea salt To make: Add the corn, avocado, tomato, black beans, and red onion to a large bowl.

Squeeze the lime juice over everything and sprinkle in the salt. Toss everything together really well and as you’re tossing, add the chopped cilantro. Serve with corn tortilla chips for dipping, or serve alongside a main dish as a condiment (it’s perfect with any kind of soft tacos, fajitas, or even on salad with grilled meat or fish)! The salsa is best when it’s served fresh, but if you have leftovers or want to chill it before serving, I suggest storing it in a mason jar.

Black Bean Salsa with Corn and Avocado

Recipe: Ingredients
- 1 cup corn fresh cooked or frozen
- 1/3 cup finely diced red onion
- 1 large tomato finely diced
- 1/3 cup cooked black beans
- 1 avocado chopped
- juice of 1 lime
- a pinch or two of sea salt
- 1-2 tbsp chopped cilantro more or less, to taste
Recipe: Instructions
- Add the corn, onion, tomato, black beans, and avocado to a large bowl. Toss lightly to combine.
- Squeeze fresh lime juice over the ingredients; add salt and cilantro and toss again until well combined.
- Serve immediately or chill until ready to serve.

- Note: The salsa is best served immediately, The lime juice will help to delay the avocado from turning brown, but it will not prevent it from doing so.
