It’s the middle of January and for me that means I’m all about soup!! And since I’m in a love affair with my Instant Pot I couldn’t wait to share this Easy Instant Pot Chicken Noodle Soup with you! No exaggeration – it’s the most delicious chicken noodle soup I’ve ever tried and it’s SO simple! You’re going to love it!
How to Make Instant Pot Chicken Noodle Soup
Making chicken noodle soup in the Instant Pot is so easy!
- Start with raw chicken. Brown the chicken pieces on sauté mode to speed up the cooking process and add tons of flavour!
- Add lots of veggies. Veggies make this soup extra healthy. We love adding lots of onions, garlic, carrots and celery.
- Use chicken stock. Adding chicken stock instead of water adds so much flavour!
- Cook on high pressure. This soup only takes 8 minutes to cook on high pressure!
- Add the pasta. Once you release the pressure, add the pasta and stir it in.
- Keep Warm for 10 minutes. Replace the lid and let the pasta cook on the keep warm setting in the hot soup.
- Add fresh herbs. Chop up some fresh parsley or rosemary and add it to the soup once the pasta is cooked to al dente.
- Serve! Use your favourite bowls and serve with a slice of crusty bread for dipping!
What kind of pasta should I use in Homemade Chicken Noodle Soup?
Feel free to use whatever noodles you prefer in this Easy Instant Pot Chicken Noodle Soup. I like to use Ditalini (just because of how it looks), but macaroni noodles, fusili, rotini, or even spaghetti noodles cracked into thirds will work as well. Just be sure to adjust the cooking time if you use a pasta that takes a little longer to cook!

Easy Instant Pot Chicken Noodle Soup

- 1 tablespoon olive oil
- 1 large chicken breast cut into chunks
- 3 cloves garlic minced
- 1 large onion diced
- 2 ribs celery sliced
- 3 medium carrots chopped
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 cups low sodium chicken stock
- 1 cup dried ditalini pasta
- fresh chopped parsley or rosemary for serving
Recipe: Instructions
- Turn the Instant Pot onto Saute mode and add the olive oil.
- Once the pot is hot, add the chicken pieces and brown them on all sides for a few minutes. Don't worry about cooking the chicken through at this stage - just get a little bit of colour on the chicken.
- Add the garlic, onion, celery, carrots, thyme and salt and pepper. Stir well.
- Add the stock and stir everything to combine.
- Add the lid, set the valve to sealing and set the Instant Pot to cook on High Pressure for 8 minutes.
- After the 8 minutes, release the pressure manually (use a long-handled kitchen tool to release the pressure under a kitchen exhaust fan, if you have one).
- Once the pressure is released, add the pasta and stir well. Replace the lid on the instant pot, set the valve to sealing and set the Instant Pot to 'Keep Warm' for 10 minutes.
- Once the 10 minutes is up, release any pressure manually.
- Serve with some fresh chopped parsley or rosemary.

This was a wonderful recipe except this is a lot of chicken! I used two bone-in chicken breasts and two leg quarters (equalled less than 5 lbs total) and I didn’t use half of the meat. Not bad to have extra cooked chicken but next time I will probably use 1/2 the amount.
