Greek Chickpea Salad
Recipe: Ingredients
- 30 ounces chickpeas rinsed and drained (two 15 oz. cans)
- 1/2 pound cherry tomatoes halved
- 1 large red onion chopped
- 2 long english cucumbers chopped
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 teaspoons fresh basil chopped (or use 1 teaspoon dried basil)
- 1 teaspoon fresh oregano chopped (or use 1/2 teaspoon dried oregano)
- salt and pepper (to taste)
- 1/2 cup feta cheese crumbled
Recipe: Instructions
- Add the chickpeas, halved cherry tomatoes, chopped red onion, and chopped cucumbers to a large bowl.
- Drizzle the olive oil and red wine vinegar over the veggies in the bowl, along with the basil and oregano and a pinch or two each of salt and pepper.
- Toss everything together very well until combined.
- Top with the crumbled feta cheese and serve.

We aren’t huge fans of whole chickpeas. It’s a texture thing, but we love things such as hummus that use chickpeas. So I always substitute cannellini or great northern beans into recipes such as this. It was yummy!!!
