And since you all LOVED my other streusel-style cake recipes I’ve posted in the past, like this Rhubarb Streusel Cake and this Peach Streusel Cake, I just knew this Caramel Apple Streusel Cake would be a big hit for this fall and winter season! In case you’re as big a fan of streusel-anything as I am, I’ve also shared these Rhubarb Streusel Muffins, these Blueberry Streusel Muffins, and these Peach Cobbler Muffins too! There’s just something so special about a cake like this Caramel Apple Streusel Cake when the weather turns cold. The spice cake base is easy to make, you can use any apples you have on hand (although local, in season are best!), and the streusel topping comes together in no time. It’s the perfect simple cake for a cool fall day, and it’s great for entertaining!

Caramel Apple Streusel Cake
Recipe: Ingredients
For the topping:
- 2/3 cup all purpose flour
- 2/3 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 4 tablespoons melted butter
For the cake:
- 1/2 cup unsalted butter softened to room temperature
- 3/4 cup granulated sugar
- 2 eggs at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup milk at room temperature
- 1/2 cup sour cream full fat, at room temperature
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 3 apples chopped into 1-inch pieces, or sliced thinly (we like to use Spartan or Gala for this recipe, but use what you have on hand)
- caramel sauce for drizzling over the top of the cake
Recipe: Instructions
- Preheat your oven to 350 degrees Fahrenheit and prepare a 9-inch by 13-inch rectangular cake pan by greasing it with butter. Set the pan aside.
For the streusel topping:
- Add the flour, sugar, cinnamon and nutmeg to a bowl and whisk them together with a fork.
- Add the melted butter and mix everything together until a crumbly mixture forms. Set aside.
For the cake batter:
- In a large bowl with a hand mixer or in the bowl of your stand mixer, cream the butter and sugar together on medium high speed until light and fluffy.
- Add the eggs one at a time and beat them in on medium speed until incorporated.
- Add the vanilla, the milk, and the sour cream, and mix together on low speed until everything is combined.
- Add the flour, baking powder, salt, cinnamon, nutmeg and cloves, and mix on low speed until everything is incorporated and no streaks of flour remain.
- Pour the batter out into the prepared pan and smooth out the top.
- Add the chopped or thinly sliced apples on top of the cake batter.
- Sprinkle the streusel topping over the apples, making sure it's covering the top of the cake evenly.
- Bake at 350 degrees for 45-50 minutes, or until a toothpick inserted into the middle of the cake comes out clean.
- Let the cake cool completely to room temperature before drizzling the top generously with your favourite caramel sauce. Slice, serve and enjoy!
