These Zucchini recipes are perfect for summer, fall, and beyond! When the garden or market is bursting with zucchini, there’s nothing quite like whipping up your favourite zucchini recipe. Whether you’re craving sweet treats like chocolate zucchini cake or classic zucchini bread, savoury dishes like zucchini fritters, roasted zucchini or grilled zucchini, or even a fresh zucchini salad or soup, we’ve DEFINITELY got the zucchini recipe you’re looking for!!
When shopping for zucchini, aim for small to medium ones – about 6 to 10 inches long. These tend to be tender, with thinner skins, fewer seeds, and a sweeter flavour, making them perfect for sautéing, grilling, or baking into breads and cakes. Larger zucchini are more watery with tougher skins and bigger seeds, but they’re ideal for shredding into baked goods, making fritters, or stuffing. Be sure to remove the seeds before shredding.
Whichever size you choose, look for zucchini that feels firm, has a vibrant green colour, and is free of blemishes or soft spots for the best flavour and texture.
Zucchini is one of the most versatile veggies! It’s equally delicious in sweet baking recipes as it is in savoury mains and sides. Because it’s mild in flavour and naturally moist, it adds texture and softness to cakes, breads, and muffins, and roasting or grilling brings out its savoury side with a delicious caramelized flavour. It’s one of those ingredients that takes on other flavours easily so it’s perfect for experimenting with lots of herbs and spices!
From fritters and casseroles to pasta and stir-fries, zucchini is the ultimate “use it everywhere” ingredient.
- Fresh zucchini works best for most recipes, especially when sliced, grilled, or roasted. Look for firm zucchini with glossy, dark green skin and no soft spots. Smaller zucchini tend to be sweeter and less watery, while oversized ones are great for shredding into breads, cakes, and fritters.
- Frozen zucchini is best used in soups, sauces, or baking where a little extra moisture won’t hurt. If using frozen shredded zucchini for baking, be sure to thaw and squeeze out the excess liquid before adding it to your batter.
