Christmas is only a week away and I have to admit, I’m a little sad about the lack of snow we’ve got. I’ve never been one to complain about warm weather (it was 14 degrees Celsius today!), but it’s hard to get my head in the Christmas game when it feels like September outside! Thankfully I have all kinds of festive recipes on the go, like this Pomegranate Cranberry Baked Brie Appetizer, that give me all the holiday inspiration despite the fact that I can still see green grass out my window!!

This festive brie appetizer is one of my favourite ways to enjoy brie during the holidays – it’s SO easy to throw together, it’s colourful and festive, and it’s the perfect balance of sweet and tart.

There are plenty of delicious things to add on top of warm cheese! For this recipe, two types of fresh berries give it a sweet and tart flavour, and the addition of chopped nuts adds the perfect amount of crunch. It’ll wow all your holiday guests for sure!

Cranberry Baked Brie Appetizer
Recipe: Ingredients
- 250 gram Brie cheese
- 1 1/2 cups fresh cranberries halved
- 1/2 pomegranate seeded
- 3 tablespoons maple syrup
- zest and juice of one orange
- 1/4 cup pecans chopped
- fresh rosemary for garnish optional
- your favourite crackers or baguette slices for serving, or veggies
Recipe: Instructions
- Preheat your oven to 300 degrees Fahrenheit and grease a small baking dish with a small amount of butter or cooking spray.
- Place the brie cheese into the baking dish, in the middle.
- In a small bowl, combine the sliced cranberries, pomegranate seeds, maple syrup, orange juice and zest, and the chopped pecans.
- Toss everything together in the bowl and spoon it on top of the brie. It's ok if some of it falls off the top.
- Bake at 300 degrees for about 15-17 minutes, or until the brie is very soft but still intact. Check it after 10 minutes to be sure you don't over-bake it.
