This Summer Berry Salad is a delicious and healthy way to up your intake of fresh and in-season fruits and veggies! Although we’re not enjoying as many summer gatherings, barbecues and get-togethers as we usually do this year thanks to current events, we can still enjoy delicious summer meals at home with our own families. This Summer Berry Salad makes an appearance most weekends at our dinner table throughout the summer as long as fresh berries are available at the market and trust me, no one is sad about it! Our kids LOVE salad, which, as a mom, I’m absolutely thrilled about. I love knowing that my kids will gobble up a big bowl of greens (and in this case, fruit too!) at every meal, and I’m always on the hunt for new salad ideas to change things up and keep it interesting. This Summer Berry Salad is one of our family’s latest favourites, and I know you’ll love it too!!

Summer Berry Salad with Creamy Lemon Vinaigrette Dressing
For the salad:
- 8 cups baby spinach
- 1 1/2 cup fresh strawberries sliced
- 1 cup fresh blueberries
- 1/3 cup sliced almonds
- 1/3 cup crumbled goat cheese
For the dressing:
- 2 tablespoons vegetable oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1 teaspoon dijon mustard
- a pinch of salt
- Add the spinach to a large bowl and add the berries, almonds and goat cheese on top.
- In a bowl (or in a mason jar), combine the oil, vinegar, lemon juice, honey, mustard and salt and whisk them together well (or shake them up well in a mason jar).
- Pour the dressing over the salad, toss well, and serve.
