This Summer Berry Salad is the perfect summer side dish - juicy berries with baby spinach, sliced almonds, goat cheese, & creamy lemon vinaigrette dressing.

Ingredients
For the salad:
- 8 cups baby spinach
- 1 1/2 cup fresh strawberries sliced
- 1 cup fresh blueberries
- 1/3 cup sliced almonds
- 1/3 cup crumbled goat cheese
For the dressing:
- 2 tablespoons vegetable oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1 teaspoon dijon mustard
- a pinch of salt
Instructions
- Add the spinach to a large bowl and add the berries, almonds and goat cheese on top.
- In a bowl (or in a mason jar), combine the oil, vinegar, lemon juice, honey, mustard and salt and whisk them together well (or shake them up well in a mason jar).
- Pour the dressing over the salad, toss well, and serve.
Notes
To make this salad ahead of time, combine the salad ingredients in a large bowl and cover and refrigerate for up to 24 hours in advance. Make the dressing and store in the fridge for up to 24 hours ahead. Dress the salad and toss just before serving.Â
