Croissant French Toast Bake

- 10 croissants day-old, cut into large chunks
- 10 eggs
- 1 3/4 cup milk
- 1 3/4 cup heavy cream
- 1 cup granulated sugar
- 1/3 cup melted butter
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- fresh berries, maple syrup, and/or whipped cream for serving
Recipe: Instructions
- Preheat your oven to 350 degrees Fahrenheit and grease a large cast iron skillet with butter.
- Place the croissant pieces into the skillet and arrange them so the top is level.
- In a large bowl, whisk together the eggs, milk, heavy cream, sugar, butter, vanilla and cinnamon until well combined.
- Pour the liquid over the croissant pieces in the skillet and toss just a little bit if necessary, to make sure all the croissant pieces are moistened.
- Bake for 60-75 minutes at 350 degrees Fahrenheit, covering with aluminum foil after 25-30 minutes to prevent the top from browning too much.
- Remove it from the oven when cooked through (about 60-75 minutes) and let stand at room temperature for about 20 minutes before serving.
- Serve with fresh berries, maple syrup and/or whipped cream if desired.

I love this dish! But I often have trouble getting the eggs to cook all the way through, while the sides and top are done! Any suggestions?
Sounds like your oven is running a bit too hot. You could cover the dish with some aluminum foil for the first half of the baking time.
